Abstract

The foodservice business sector in Poland noticed the spectacular increase after the switch on the market economy, then since 2006 the number of.catering outlets has been decreasing; however the restaurant sector continues development. One of the reasons for the reorganization of the foodservice market is the evolution of Poles’ dining out preferences. To survey customers’ preferences, the Restaurant Preferences Behavior Model RPB model was applied. This paper presents the results of the pilot study on restaurant related preferences, a trial segmentation of the preferences is proposed.
